Breakfast Flatbread


  • 1 Molly’s Gluten-Free Bakery Flatbread
  • 1 tablespoon olive oil
  • 6 eggs
  • 1 red pepper (chopped)
  • 3-5 pieces Canadian bacon (chopped)
  • 1/4 cup feta cheese
  • Chives (chopped)


Preheat oven to 350°. In a frying pan over medium-high heat, add olive oil. Once hot, add Canadian bacon to pan cooking until pieces are browned. Add peppers and cook for one more minute. Remove from pan. Over medium high heat in same pan, cook scrambled eggs until light and fluffy.


Top flatbread with eggs first, then pepper and Canadian bacon. Sprinkle with feta cheese. Bake on a pizza screen or stone for 8-10 minutes or until toppings are baked to your liking. Sprinkle with chives before serving.
